Japanese researchers have developed a new method for understanding how plant compounds affect our sense of taste. A team from Shibaura Institute of Technology created a sensory evaluation system that connects the chemical structure of polyphenols with their taste properties. Polyphenols are natural compounds found in tea, cocoa, fruits, and vegetables. Seven trained panelists participated in the study, which took four months to complete. The research was published in the journal Foods in April 2026.
